Through a once-in-a-lifetime scholarship, a student gains the knowledge she needs to build her culinary career and hands-on experience with study abroad opportunities.

Lillian Garconnette has had a passion for all things culinary since she was young. Her mom ignited her interest with baking.

“I picked up after her,” says Garconnette who admits to watching the Food Network and cooking shows religiously. “I was constantly experimenting in the kitchen.”

As an online student, and scholarship recipient, Garconnette has the flexibility to do as much cooking at home as she wants. With aspirations to work in fine dining, the undergraduate is resolute on her path in pursuing her master’s degree at the same time with the Bachelor and of Science in Hospitality Management program.

She’s also thrilled to be named a Carnival Gold Scholarship recipient. The Chaplin School of Hospitality and Tourism Management awards five full-ride scholarships every year to exemplary freshmen students seeking an undergraduate hospitality management degree at FIU. The scholarship award is equivalent to $80,000 or up to $20,000 per year for each student.

Garconnette feels incredibly fortunate to have been selected. In the following, she discusses her experience in her program and the impact of her scholarship.

When do you graduate?

My intended graduation date is Spring 2025, however I may graduate sooner, depending on how many credits I decide to take. 

What is your background?

My parents are immigrants from Saint Lucia. I was born and raised in Miami, Fla.

Where do you see yourself in five years?

My ultimate goal is to open a restaurant, I have a few ideas in mind but in five years I see myself working toward my goal, whether that’s starting out small with a food truck or improving my skills by working “back of house” (BOH) in a fine dining restaurant. My dream restaurant to work for would be one under Groot Hospitality, like Komodo or Gekko.

What led you to this field and why did you choose FIU?

I went to North Miami Senior High for their culinary program and my culinary teacher was like a father figure to me. Throughout high school I competed in culinary competitions and completed various catering events, like our homecoming. During my senior year of high school, I had a conversation with my teacher. At the time, I was not completely sold on the idea of attending college. I was confused about what I wanted to do after high school. I decided that I should go after my passion in culinary sciences. FIU gave me the chance to stay close to home and get one of the country's best hospitality educations. It felt like a win-win. 

Have you completed any online courses?

I have completed a few online courses and it allows me the opportunity to work at my own pace rather than having to do assignments and homework in class. It's difficult to manage school and work with all in-person classes, but online classes free me from the responsibility of having to show up every class because it can be difficult.

How did you hear about the scholarship?

This scholarship opportunity was communicated to me when I received my Chaplin School of Hospitality care package. I honestly didn’t think I would get it, but I applied to give myself a fair chance at it. But here I am now.

How has this scholarship helped you?

The scholarship has funded not only my education but opportunities such as study abroad. The funds allow me to travel, which is a huge priority for me. When traveling, I can learn about the hospitality industry in different countries. I am so grateful that I don’t have to worry about student loans and funding for school. This scholarship gives me peace of mind and helps me focus on my education.

What do you think the impact will be for your future?

The opportunities and experience that the scholarship has allowed me to have will not only have an impact on my cultural awareness but also open doors that I wouldn’t have had otherwise. I will be graduating college debt free.
